  • 300 g canned chickpeas, washed and dried
  • 5 tablespoons olive oil
  • 2 tablespoons dried mint
  • 1 tablespoon red wine vinegar
  • 150 g arugula/leaf lettuce
  • ¼ cup fresh mint leaves
  • ¼ cup chopped red onion
  • ½ grilled cherry tomatoes
  • 1 tablespoon freshly squeezed lemon juice
  • 80 g crumbled feta cheese

Training :

  1. Preheat oven to 200°C.
  2. Place half of the chickpeas on a rimmed baking sheet. Drizzle with 2 tablespoons of olive oil and mix well.

  4. Let cool and set aside.

This hearty Moroccan chickpea and sweet potato salad is full of amazing flavor. In addition, it is quite simple and easy to prepare.

Ingredients:

  • 2 sweet potatoes, diced
  • 4 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 pinch of salt and pepper
  • 1 can chickpeas, washed and dried (about 1 ½ cups)
  • 2 green onions, cut diagonally
  • 1 bunch chopped cilantro
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon maple syrup or honey
  • 1 tablespoon orange peel
  • 1 teaspoon cumin
  • ½ teaspoon cinnamon
  • ½ teaspoon cayenne pepper or Aleppo pepper flakes
  • salt and pepper for taste

Training :

  1. Preheat oven to 220°C.
