  • 300 g canned chickpeas, washed and dried
  • 5 tablespoons olive oil
  • 2 tablespoons dried mint
  • 1 tablespoon red wine vinegar
  • 150 g arugula/leaf lettuce
  • ¼ cup fresh mint leaves
  • ¼ cup chopped red onion
  • ½ grilled cherry tomatoes
  • 1 tablespoon freshly squeezed lemon juice
  • 80 g crumbled feta cheese
  • kosher salt and pepper to taste

Training :

  1. Preheat oven to 200°C.
  2. Place half of the chickpeas on a rimmed baking sheet. Drizzle with 2 tablespoons of olive oil and mix well.
  3. Season with salt and pepper. Roast until chickpeas are golden and crispy (20-23 minutes).
  4. Let cool and set aside.
  5. Place the remaining olive oil, lemon juice, dried mint and vinegar in a small bowl. Add salt and pepper to it.
  6. Combine remaining chickpeas, arugula/lettuce, fresh mint and onion in a large bowl.
  7. Drizzle with vinaigrette and season with salt and pepper.
  8. Stir gently.

This hearty Moroccan chickpea and sweet potato salad is full of amazing flavor. In addition, it is quite simple and easy to prepare.


  • 2 sweet potatoes, diced
  • 4 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 pinch of salt and pepper
  • 1 can chickpeas, washed and dried (about 1 ½ cups)
  • 2 green onions, cut diagonally
  • 1 bunch chopped cilantro
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon maple syrup or honey
  • 1 tablespoon orange peel
  • 1 teaspoon cumin
  • ½ teaspoon cinnamon
  • ½ teaspoon cayenne pepper or Aleppo pepper flakes
  • salt and pepper for taste

Training :

  1. Preheat oven to 220°C.
  2. Place sweet potatoes on a baking sheet lined with parchment paper, drizzle with olive oil and sprinkle with smoked paprika, salt and pepper.
  3. Mix well. Then lay out the sweet potatoes to brown them.
  4. Bake 15 minutes. Stir and return to the oven until they are soft and slightly crispy (about 10 minutes).
  5. Meanwhile, place the chickpeas, green onions, cilantro, olive oil, vinegar, maple syrup, orange zest, cumin, cinnamon, and cayenne in a medium bowl and stir to combine.
  6. When the sweet potatoes are soft, let them cool for 10 minutes.
  7. Then add them to the ingredients in the bowl and season the salad with salt and pepper to taste.
