Light wild garlic soup recipe

Ingredients for 4 persons : 60 g wild garlic leaves, peeled, 200 g potatoes, 1 green apple, 3 shallots, 1 l vegetable broth, 2 tbsp. pepper.

To make this delicious and healthy soup recipe: Peel and finely chop the shallots.

Peel and cut the apple and potato into small cubes.

Saute shallots for 5 minutes until translucent. Add apple and potato cubes. Pour in the broth, bring to a boil and simmer for 25 minutes over low heat.

Then add chopped wild garlic leaves and simmer for 5 minutes. Salt, pepper and grind with an immersion blender.

Lightly beat with cream and serve the soup hot, garnishing it with sprigs of flat-leaved parsley, chopped wild garlic and parmesan shavings.
