Our after-party recipe: Turmeric Cauliflower Soup, Pomegranate Crispy Vegetables

To accompany good New Year’s intentions, Chef Fabrice Mignot has developed a detox soup recipe to share by the fireplace or in front of the TV.

Ingredients. Cauliflower soup: 1 cauliflower, 500 ml coconut milk, 500 ml water, 10 g fresh turmeric, 3 g salt, 3 g Espelette pepper, 40 g buckwheat. Crispy vegetables with pomegranate: 2 carrots, 1 raw red beet, 1 pomegranate and 20 ml pomegranate juice, 1 lemon, 30 ml olive oil, 3 g salt, 3 g hot pepper.

Cauliflower Soup: Cut the cauliflower into small heads and wash. Pour water and coconut milk into a saucepan. Add cauliflower. Cook over low heat for 25 minutes. Using a slotted spoon, remove the cauliflower and place it in a blender. Mix by adding turmeric and boiling milk to get the desired consistency. Season with salt and pepper Espelette.

Pomegranate Vegetable Crunch: Peel and grate carrots and beets. Open the pomegranate and collect the seeds. Mix 3 ingredients. In a bowl, mix olive oil, Espelette pepper, salt, pomegranate juice and lemon juice. Pour this dressing over the vegetables and leave to marinate for at least 30 minutes.
