Ingredients: 150 g dark chocolate; 100 g of powdered sugar; 100 grams of butter; 4 eggs; 1 tablespoon of coffee; 2 tablespoons of flour. For decoration: 1 box of Mikado, 100 g chocolate, 50 ml fresh cream.

Training :

1. Preheat oven to 180°C.

2. Break the chocolate into small pieces, add a teaspoon and melt everything in a water bath.

3. Cut the butter into thin slices. When the chocolate is soft, add the butter and let it melt. Mix well with a fork to get a nice smooth paste.

4. Meanwhile, in a large bowl, beat the egg yolks with the powdered sugar until you get a nice straw yellow mixture.

5. Pour chocolate into a bowl, then add flour. Mix well so that there are no lumps.

6. Whisk the egg whites and gently fold them into the workpiece.

7. Pour the dough into the mold. Be careful, it will swell a lot during cooking, so it is better to fill the mold to three quarters of its height.

8. Bake for 25 minutes, carefully watching the cake.

9. While the cake is baking, prepare the ganache. Boil fresh cream, then turn off heat, add chocolate. Wait for it to melt to beat everything until you get a smooth cream.

10. Remove from oven and let cake cool completely before decorating. Spread the ganache on top, then lay in a few mikados to represent the nest straw. Then put some chocolate eggs in the center of the cake.
