Serves: 4 – Preparation: 10 minutes – Cooking: about 20 minutes
Ingredients
- 2 chicken breasts, boneless, skinless, diced
- 5 ml (1 teaspoon) thyme
- 45 ml (3 tablespoons) olive oil
- 250 ml (1 cup) white wine
- 2 liters (8 cups) low-salt chicken broth
- 250 ml (1 cup) carrots, diced
- 15 ml (1 tablespoon) cornstarch dissolved in a little cold water
- 1 liter (4 cups) spinach leaves
- 250 ml (1 cup) 15% cream
- Salt and pepper for taste

- 3 onions, chopped
- 2 jalapeno peppers, diced (remove seeds and white shells)
- 60 ml (4 tablespoons) butter
- 2 garlic cloves, minced
- 60 ml (4 tablespoons) maple syrup
- 30 ml (2 tablespoons) white vinegar
- 500 ml (2 cups) cooked orzo pasta
- Salt and pepper for taste
Training
STEP 1
In a hot saucepan, sauté the chicken and thyme in a little oil.
2nd STEP
Salt, pepper and deglaze with white wine.
STEP 3
Add broth, carrots and simmer for 15 minutes.
STEP 4
Add cornstarch, spinach, cream and cook for 2 minutes. Check seasoning.
STEP 5
Meanwhile, in a hot pot or skillet, sauté the onion and peppers in the oil, 2 to 3 minutes.
STEP 6
Add garlic, maple syrup, vinegar and simmer for 5 minutes. Check seasoning.
STEP 7
Divide the chicken broth, caramelized onions, and some cooked pasta into each bowl.
