Recipe Cold beetroot soup with fresh goat cheese
Ingredients
- 2 boiled beets
- 1 garlic clove
- 1 lemon
- 250 ml liquid cream
- salt pepper
- 4 tbsp fresh goat cheese
- Pine nuts
- basil leaves

Cut the boiled and peeled beets into cubes and put in a blender. Add a peeled and decontaminated garlic clove and lemon juice.

Start stirring and gradually pour in the liquid cream until you get a smooth soup. Salt and pepper for taste.

Serve in bowls with a tablespoon of fresh goat cheese and basil leaves. Add a few pine nuts for crunch and tenderness.
