Ingredients for 4 persons

3 shallots, chopped

150 g potatoes

1 large diced carrot

1 white leek

1 celery stalk, minced

1 minced garlic clove

1 peeled apple, coarsely chopped


10 ml beer

40 cl light vegetable broth

1 bay leaf

20 ml liquid cream

3 tbsp chopped arugula


Espelette pepper powder


Make me come back shallots, white leeks, celery, carrots, garlic and potatoes in a little oil.

pour beer, add apple and bay leaf and bring to a boil.

Wet broth, reduce heat and simmer covered for about 30 minutes.

Mixing soup and adjust seasonings.

Climb whipped cream with a pinch of salt and gently fold in the arugula.


Divide the soup among each bowl, sprinkle with Espelette and top with arugula quenelles.
