Serves: 4 – Preparation: 15 minutes – Cooking: about 25 minutes

Ingredients

dumplings

  • 225 g (1/2 lb) ground beef
  • 225 g (1/2 lb) minced pork
  • 60 ml (4 tbsp) parsley leaves, chopped
  • 60 ml (4 tbsp) basil leaves, chopped
  • 250 ml (1 cup) onion, finely chopped
  • 1 garlic clove, minced
  • 15 ml (1 tablespoon) honey
  • 1 pinch chili flakes
  • 1 egg
  • 75 ml (5 tbsp) breadcrumbs
  • 60 ml (4 tablespoons) olive oil
  • Salt and pepper for taste

Bouillon

  • 250 ml (1 cup) carrots, diced
  • 5 ml (1 teaspoon) Provence herb blend
  • 2 garlic cloves, minced
  • 15 ml (1 tablespoon) tomato paste
  • 1.5 liters (6 cups) chicken broth
  • 250 ml (1 cup) green peas
  • 125 ml (1/2 cup) grated Parmesan
  • 500 ml (2 cups) soup noodles
  • Salt and pepper for taste

Training

STEP 1

In a bowl, mix the minced meat, parsley, basil, onion, garlic, honey, chili, egg, breadcrumbs, salt and pepper.

STEP 3

Form small meatballs the size of a large marble.

STEP 4

In a heated frying pan, fry the meatballs in a small amount of oil, 2 minutes on each side.

STEP 5

Add carrot brunoise, Provence herbs, garlic, tomato paste, pour over broth and simmer for 15 minutes.

STEP 6

Add the peas, half of the parmesan, noodles and cook for 6-7 minutes. Check seasoning.

STEP 7

Serve with toasted bread and garnish with parmesan.
