We invite you to combine asparagus and artichokes in a delicious spring salad.


You will need 4 boiled artichoke hearts, 24 asparagus tips, a few lettuce leaves and 120 g haddock (smoked haddock).


➤ Cut the bottoms of the artichokes into quarters.

< Boil the asparagus tips in boiling water for about ten minutes. Drain and rinse quickly under cold water.

< Immerse the smoked fish in a mixture of boiling water and milk for 5 minutes. Rinse, dry and crush the pulp with your fingers.

➤ Clean the salad.

< Prepare the vinaigrette by mixing 1 tablespoon sherry or apple cider vinegar, 3 tablespoons oil, 1 tablespoon chopped chervil, salt and pepper in a salad bowl.

< Add asparagus, artichokes and curly endive to this sauce.

< Gently mix all these ingredients together, then divide them among four large bowls. Finish dressing by sprinkling with strips of haddock.
